There's a few techniques that help to exploit the way car acceleration is calculated in GTA V, funnily enough it's been the same since GTA 3.

You basically tap the brakes, or handbrake, just prior to shifting gears to trick the car into revving higher than it normally would, than in turn results in higher speeds/better acceleration when you move into the next gear....and in the case of RWD cars, the back tires spinning due to higher revs etc, perfect for drifting.
