Grind some levels, kill the stone face enemies in hopes they drop potions, and learn his attack patterns.

Just keep trying until you can react to his attacks and dodge more quickly. It's probably not a matter of you getting worse as you age, but that you're more impatient and don't want to take the time to git gud.

You just have realize there's no reason to fight the skeletons, all you have to do is keep hitting him on top platform, his second form Is actually really awful.

You should have enough hearts at this point to take off more than half its health with the cross. Lops like, 7 minutes off of a 10 minute battle.
Dragon Zombies, however, are painful even with the cross.

This game has really good replay value.
Each time you beat it, you enter a name in that lets you play the entire story again with heavily modified stats, traits and restrictions.
Warrior is my personal favorite since your attack is so high that you don't need to grind for anything to kill tougher enemies.
I still haven't beaten it on thief which is the last but hardest one
