Otherwise I'd like to see a game that is Slice of Life, or very light hearted stuff with no drama or action in between. I know Sup Forums wouldn't call it a game but I think there's potential there for good story telling and exploration.

An RPG structured around you ACTUALLY being the bad guy. And I don't mean "Oh no, I was actually the bad guy", I mean being the bad guy intentionally the entire time with no redemption.
I really REALLY want a Thief in a modern setting type game where you stage burglaries and home invasions. There was some indie game that launched that did this a while back but it turned out to be a piece of shit.

Alternatively, playing as the killer in Dead by Daylight.

Payday was a shit game. It LOOKS like a heist game but it's really just a fps with a twist. It isn't really focused on the heist. It's about shooting super cops / cop monster/ cop wizards.
GTA.. well, heists were finally added. GTAs actually pretty damn good in that regard now that they are finally here.

True Crime NYC is the closest we'd get for now i think. Play as an undercover cop, but used to just play on the beat alot.
Loved being called out to various events going on in the city. Robberies, domestic violence, fights breaking out.
Rolling up with melee weapons, or guns or rifles. Beating on them with your learned martial arts until they suddenly draw a gun on you. When you turn up and their's a fucking homeless man walking around with a flamethrower. Or when you're arresting everyone then suddenly have no choice but to actually kill.
Could search backs of cars and people almost at will. Could be a dick and plant evidence. More experience being a cop and you get to increase your rank within the dept, gaining new weapons and access to newer dept vehicles.
That having to identify yourself as a undercover cop or else the other cops might shoot you.
The goofy ass story was brilliant too.

Oh yeah I've done it before on /vg/. The best thing in the world is to set up a checkpoint in a hallway. Ask for like 5 credits to be let through. People will lose their SHIT.

You still get the whole "find bad guys who backstabbed you" plot obviously, but you can do that not out of some noble intent, but to join them, and optionally even to backstab them, taking all they created, or destroying it.
