You won't find many on either system. Trails of Cold Steel is definitely along the lines of what you're looking for though, and the sequel is right around the corner so if you do get into it you won't be too blueballed by the ending.

Other than that, you might wanna keep your eyes on Tokyo Xanadu, Exist Archive, and Caligula. These are getting already confirmed for localization and might fit the bill for what you want.

Aren't SRPG/TRPG the most underrepresented genre today? If you have no trouble finding enough of those to play and get tired of, you shouldn't need any help finding games to replace them.

It's absolutely an acquired taste. Have you ever played monster rancher? The chao gardens from sonic? You've gotta pick an overlord and basically spend some ingame weeks giving them the right training regiment or presents. There's a healthy amount of VN moments, and I would personally say the writing is compile heart's better showing (for what it's worth).

When the time comes, you throw your overlord at the apocalyptic demon eating your lands and try to shave off as much hp from him as you can while trying to stay alive. The gameplay is kinda mystery dungeon styled, but with an insane emphasis on using your techniques to dodge and weave through trillion's attacks.

I honestly give any game a fair shake despite the genre and I like trying new things. I like what I'm hearing so far so I'll be buying it when I can.

It's pretty much exactly like monster rancher. Pick a stat, get a little scene, pray that you got some deep gains for the upcoming tournament.
