The creation trio (Palkia, Dialga and Giratina) are one step bellow Arceus.
And then everything else is below them. The rest is really up for debate, but I'd say the box legendaries from Ruby and Sapphire are pretty high since they are masters of weather, and the XY guys being Life and Death deities would imply they are pretty high up there too.

But where do pokemon like Mew and Yveltal?

Mew claims it's the first Pokemon, and contains the DNA of all other Pokemon in it's POkdex entries. And Yveltal seems to imply it's some sort of death/phoenix deity that will absorb the life force of all living things. Are you supposed to just ignore Arceus and the creation trio with these entries?

Kirby's lore has unironically been getting deep, what used to be standard bad guys now all have a backstory hidden through flavor text, with parts intentionally obscured so you have to speculate based on other cues the games give you, and that's not getting into the more overarching lore like everything about the ancients and the countless connections and callbacks to previous bosses and characters

Dream Land saga (including KA and K64) has the strongest worldbuilding.
Super Star has some nice worldbuilding, the stuff with the Meta-Knights, the galaxy, multiple fountains of dreams, and NOVA was cool.
Gen 6 Kirby didn't have much in the way of lore. Amazing Mirror was okay but just standard AU stuff. The others don't really give you anything.
RtDL has good worldbuilding, I like Egg Engines, but the idea of halcadranians seems stupid to me. That everything in the galaxy was made by an alternate dimensional race, stuff like NOVA and the fountain of dreams are left unexplained, but utilized.
Triple Deluxe has Floralia, which could have been cool, but it was basically treated as "Dream Land above the sky that isn't part of Bubbly Clouds" and it was pretty weak. I loved Sectonia and Royal Road, Sectonia's miiverse story was kinda neat I guess, but I liked her better without that spider backstory.

I honestly love this thing, I'm doing a Nuzlocke right now and I'm using Exeggutor and I've grown to love him as he's my best 'mon.

I remember seeing a post once that detailed how Arceus' design is inspired by some deep Shinto legends and shit. If wish Game Freak put out an artbook or something explaining the design inspirations for a lot of Pokémon because right now all we have are fan theories.
