I'm gonna say 64 but honestly I've only played a bit of the SNES and GBA ones (which I hated, 2D mario kart games and their clones never interest me), 64 and 8 so my experience is pretty limited.

Mario Kart 8 has best everything. And the DLC tracks were fucking fantastic. Probably the best value I've ever gotten out of any DLC ever.
All the other mario kart games have become retroactively underwhelming for me after 8.

The only reason I like the SNES version is because it is easily my best track of all games, for some reason I just really ace that shit despite the lack of barrier and all the thwomps in the way.
Yet everytime I'm on another RR that isn't 64, I find myself falling off some bullshit, getting hit by blue shells and lightning constantly while I'm over a hole and I get last place and it just pisses me off.
For just plain ol' cruising though, I love MK64. It's a nice slow change of pace with relaxing music. On the other hand, the Wii version has my favorite RR music. It has a nice callback to SMG's Good Egg Galaxy playing alongside the main melody that catches my ears.
