I think it's why the souls games are so popular. They're good, but the main draw is that they're one of very, very few big name series that just try to be a fun video game.

Hitman actually surprised me by ignoring Absolution and going back to being a Hitman game. Apart from a small establishing shot at the start and a equally small cutscene at the end of each mission showing 47 escaping, you're in control the whole time. No interactive movie bullshit.

"book" like games and movie like games have existed since the beginning. Text based games on the PC were a thing for decades and VNs have been consistently popular in Japan for console and PC since the nineties.

Cinematic games were a thing as well and the only reason they weren't more prominent was because of restrictions in graphics. Even then, games like the original Ninja Gaiden trilogy were well known in part because of Tecmo Theater.

Games like Monkey Island are a classic. The only reason these kinds of games are being frowned upon now is because it is an attempt from the "hardcore" video game community to try to separate themselves from the "casuals"

I'm more curious why games can't be moderately budgeted anymore and still sold for full price. I'm curious why PC gamers demand all games to be cheap and why console gamers think that unless the game has AAA graphics it should be sold at a discount, despite the fact that games haven't really wen up in retail price for ages yet the average cost to develop a game increases every year.

I'm curious why Japanese games keep getting attacked as though out of nowhere people discovered cultural differences between Japan and other countries. I'm curious why advertising Japanese games in America is becoming more and more difficult and why just when it looked like we were getting more games localized (PS2 and PS3 era) it's starting to become backwards again and our only hope at this point is Asia released games with mediocre English translations.

You'll just need to either make your own games or follow underground developers (not indie scenes, most of those are also very mainstream) for traditional games.

There are a shit ton of games like that. Also what you described has been a thing even in the NES era and before. Some games have long bits of text in the middle of gameplay. Go play Ninja Gaiden and you get cutscenes before and after every mission. Except the difference between those cutscenes and modern ones is that the old ones were just reused pictures that changed once a minute while you read text.

story in videogames should be more like in the soul games, it is there for you to find and it doesn't get in the way of gameplay, which sometimes actually makes you wanna know what's going on.
