I know in FF4, using Slow was a good way to get an edge over bosses. I don't think a single one was outright immune to it.

Every game treats status ailments differently. My default is to basically ignore them until they prove they're dangerous.
Poison does bitch damage in some games and will kill you in a few turns in others but I'm not going to go way out of my way to do anything about it until I'm sure it's dangerous.
