I really enjoyed the changes made in this remake. Especially Stage 5' and the Dracula fight actually being challenging.
How does it compare to the SNES port?
Dracula X is not a port. It's a completely different game that just recycles assets.
Why doesn't anyone seem to understand that?
I haven't actually played it so I don't know anything about it besides the controversy surrounding it.
I own both the Xbox 360 version of SotN and the PS1 Classic version cause I forgot I had the 360 version. Is there any reason to play either version over the other or are they about the same?
They're pretty much the same except the voice acting and the rereleased version has extra goodies i.e playable Maria and more music.
Does the 360 version have different voice acting and shit? I thought that was just the version included with Dracula X Chronicles.
Also, now that I think about it, I think I heard that the 360 version removed some of the FMVs for some reason. If that's all then I think I'll go with the 360 version cause I'm a sucker for achievements. If only PS1 Classics had trophies.
I just checked on youtube and apparently it uses the original voice acting. My bad. Don't know about the FMVs though.

rondo of blood ain't that bad, almost all of the enemies are designed with the backflip in mind, so it's easy to dodge attacks
play castlevania 3 for a real challenge

Wait, the remake is actually hard? I've played the original Rondo of Blood and it was extremely easy.

FMVs were removed because of Microsoft's rules about max file sizes on downloads. This was back when the XBLA was a new thing still and SOTN was the biggest game to be released on the service.

Dracula's third form can be tough at first, but this game is generally even easier than the original Rondo of Blood, which is already a really easy game.
You should play Castlevania 3 to see how hard things can really get. Or god forbid Haunted Castle.
The 360 version horribly garbles up what's supposed to be a really beautiful collapsed castle backdrop at the end of the game. It also replaces the original credits theme with a track from one of the PS2 games (it's for the best since that original song is so fucking bad).
You're thinking of the PSP version, which is the only version to get different English VA and its specific Maria mode.
The credits song was probably a licensing issue.
Everything else was a fuck up.
