I get they have more powers in total, but the mixing was fun... why don't they do that anymore?

Probably too complicated because of all the selection. Kirby 64 had what? 6 abilities?
Kirby's dreamland 3 and 64 had a different director aside from Sakurai who's dropped off of the industry's radar entirely. The two games feel drastically different than the rest of the series.

Power mixing allowed you to do very basic bare bones boring ass moves that only required one button. No thanks.
But it was fun I don't see why the can't balance the game around power mixing.
power mixing was a neat thing at first, but you soon discover that you really don't want majority of the powers.
the kirby series later went and copied superstar's gimmick of full movesets for each power, and thats where we are now.
however no other kirby game copied superstar's helper mechanic, unfortunately

Please stop calling everything new/different a "gimmick." I know the word itself isn't negative, but it carries a negative connotation here.
I agree that power mixing was cool, but about half the powers were almost useless.
You should give some of the other games a try. They are pretty fun.
I think Kirby's Dreamland 2+3 actually have a bit of what you're looking for in that all of the animal helpers you can ride have unique versions of each power that can be experimented with.
Not coincidentally, KDL2/3/Kirby64 all shared the same director, which is why they're kind of the oddballs of the series.
That being said, you owe it to yourself to try more of the series, because people aren't joking when they say there are no "bad" Kirby games.
Too bad, they were the best ones but I also like the one on NES and the other SNES one.
In Kirby 2 and 3, you did some "power mixing". Except instead of using two powers, you mixed one power with an animal friend.
And it doesn't get used any more because you only had one move. You press the attack button then do your move. Also you only have like...7 powers. Fireball, Spark, Stone, Needle, Ice, Parasol, and Cutter. Plus Broom in 3 and Bomb in 64.
Kirby's Return and beyond uses the Kirby Super Star style of powers, where you can perform a bunch of different moves and you get LOTS of powers. Only thing missing are the helpers.
That's what Kirby gameplay mechanics are called. The manuals even refer to them as such
Go play Planet Robobot or Super Star (Ultra). Both are generally considered the best in the series, and are a LOT better than 64. 64 is a decent game, but I played it for the first time after beating Robobot, and it was really slow and despite power mixing sounding cool, it's really bare-bones compared to each power having it's own moveset.

That's actually why you have Kirby pick up enemies and throw them...that was supposed to be Waddle Dee's gimmick. And they kinda had to make Dedede playable at certain points so they just had Kirby ride him.

I was going nuts, trying to get all the cards and beat the game to the fullest hoping I'd be able to play as Kirby's friend.

Yeah what said and from what others mentioned about most being inconvenient or pointless by the time you mix them. I wouldn't mind if they did it again as long as they made them more useful, like solving puzzles.
The other games are great though and recommend you check some out. Kirby 64 has a great atmosphere and slow pacing for you admire it, but other games are more fast paced with more content and more powers. The mall level in Shiver Star is one of my favorite Kirby levels.
They leave after its all said and done.

I kinda want to see the cast of K64 to meet the newer character modern Kirby has + The Squeaks as well. The chances of this ever happening is slim, but damnit I want this!
I'd say they don't do it anymore because they always want to do a new gimmick in each new game. We had what since then, hyper moves from return to dream land, Robot helper in Robobot, small touchscreen mixing in squeak squad mixed with elemental mixing and unlocking powers with chests and then mini kirbys in that one game I can't remember.
