They did that till PW and Phantom Pain.
With those two you have to select the missions from the level select screen. In PW it doesn't suck as much because all cutscenes are selectable from a menu, but with Phantom Pain there's a ton of stuff you cannot rewatch unless you start all over again or watch it on You Tube.
Bloodborne/Soul series
DSIII fags are insufferable.
You could put 3 Red Phantom Fume Knights that aggro together in the tunnel before Last Giant and they would just accuse you of being a shitter if you complain about it

MGS2 in particular.
Doing a new game + (with different dog tags as well) gives the game a whole new perspective because you know the twist, and you pick up on all the subtle clues and nuances. Tremendous use of replayability.

The European Luigi's Mansion does it well.
Resident Evil, it's just pretty fun to go through it with all the end-game level guns, as opposed to your ammo starved handgun at the start.
Infinite Rocket Launcher and Chicago Typewriter are a must, same with knight suit Ashley.
None of the smt games that's for sure.

I've always felt like the Tales games do it well. You collect grade throughout the game and when you finish the game you can spend that grade to get a multitude of things to carry over.
It's too bad Tales games tend to not be that replayable.

Whenever I try to replay tales I end up reaching 'that dungeon' or some part of the game that feels like a chore so I never make it to the end of my second playthrough, plus having to read a guide in order to not miss shit sucks.
