Do you guys think that No Man's Sky could gain longevity and replay-ability with mods? What kind of mod do you think would save this game (that clearly has potential, even being such a huge letdown)? What mods would make you guys regain interest in the game and what mods you guys think would work and what would you like to see just for shits and giggles?

I think a space bounty hunter mod could work great. You get jobs throughout the galaxy and have to travel far distances and track down specific NPC's so you could kill and get money or exclusive itens so you could get more missions or stuff like that.

Doubt it. It's not impossible, but realistically I think you'd need a full dev team to build an actual game on top of the tech demo that is NMS.

The game wasn't even finished when they released it, I found it extremely fun when I first bought it on PS3 but never finished because it was boring, the lack of any combat, and there was no roleplaying. I payed like 10$ for it on a steam sale later, fully modded it and now I'm completely hooked.
