I only remember MediEvil and Stubbs the Zombie, along with the Disciples and HoMM games but those are more TBS related games rather than just playing as a character who happens to be undead.

This irks me slightly. You said you weren't looking for an MMO, which exempts you from this, but I hate it when people don't understand what an MMO is supposed to be on a conceptual level, at least, as far as roleplaying goes.
A lot of really naive people want some kind of perfect game where everyone is treated special and they can do their own quests and the npc's will suck their dick alone because only they are the true chosen one and on and on, etc etc.

Total war warhammer lets you play as vampire necromancers with undead armies. age of wonders 3 does the same thing and it might actually give them more personality

Then by the time you've mostly finished off all the humans you pit your forces of the undead against hordes of chaos coming down from the north

Undead in Dark Souls are people who are losing their humanity (a strange soul-like thing that defines the normal humans from everyone else) second by second, and getting themselves killed just makes it worse. Not only you lose part of your sanity, also you start to look more rotten for every death you suffer, unless you can get more humanity to push back your decent to madness.
Eventualy, you will no longer take it anymore and you will snap, turning you in a Hollow, a zombie who seeks souls but can never be brought back to their former selves and then they can die for good.

I get the feeling that a lot of people are praising it because it's Warhammer and Warhammer fans tend to be a bit thirsty when it comes to video games of their franchise. I mean, last TW-like game they got was Mark of Chaos.
I admit, my bias is my bias, and that doesn't mean you're not going to like the game, but I just hate there's already so much nickel and dime bullshit with the DLC. WoC being pre-order and paid DLC after launch is just one of the many things.
Also, a lack of matched combat. The units just swish their weapons through the air, but never really seem to hit each other, yet animations play out as they did.

MTW is the peak of Total War. Ever since then they've been taking it in a direction I don't like and streamlining it for a larger audience and focusing on flashy effects. I still enjoy the newer games for what they are but the nickel and diming since Shogun 2 killed my enthusiasm for the series.

I don't think Atilla or Rome 2 were any good at all. They need to do away with the battlescape engine if they're going to obsess with melee combat. The battlescape engine in the newer games is designed for line infantry.
