Fuck, this Bestial Twilight mission is kicking my ass in Resurrection. The with that zips all over and lightnings just pushes my shit in, even if I managed to separate them. Mostly just strolled through the game until now, had some hard stretches but nothing this bad.

Probably doesn't help that I've spent the game dodging until now so my timing for blocking is pretty slow.

Skills are on weapons, upgrade parts, that god arc module thingy, shields, and guns. Press start to see what they do. The abandoned god arcs have skills that can be transferred to another item of the same type, so skills on a spear can only go onto another spears. What weapon are you using? You might want to just practice different inputs until you understand how they work. Also read the system terms, they help a lot.

Male Voice 8 is objectively the best voice, and
choosing Import Save Data resets your options, so I'll just sex change endgame when all the outfits are available.

You pick a person who you want to use the skills of. Like Ciel, she gives more consumables from the mission reward section by selecting her, or Nana has the endurance thing, which makes it so no matter how much you died, you still get the endurance bonus at the end, meaning a specific material that might've been locked behind that requirement. You'll eventually start to get the hang of things, the first few ranks are easy.

When you see three diamonds on the top right corner of the portrait you'll get an episode with them. It doesn't happen on story missions though.
They can happen with anyone but the scenes you get are random with maybe like 3 or 4 different variations of one scene.

Are you talking about Character Episodes or just the Support Skills that get picked randomly?
Character Episodes have various requirements, the menu at the terminal tells you what they are. Support Skills are just random.

Ciel just joined my party. I wasn't liking the game, but the fight you do right after she joins made me see the potential of the game and now I really want to try to enjoy it.

I've never been able to get into these hunting games because the entry is just so weird for me. Unlike Monster Hunter, however, there is hardly any information on this game online. Is there a good beginner guide somewhere?

I'm just not even sure where to begin here. So far the game hasn't really pushed me to do anything beyond just going into a mission and mashing buttons and using health pots when need be.

That's the end of the original God Eater. The Burst remake added another story arc that follows it, and then the Resurrection remake added yet another story arc that followed that.
So you are now roughly 1/3 through the story.

That's great, I'd be severely disappointed if that was the end.

You are gonna miss out on some references and fanservice in GE2RB and spoil a couple of the GER twists for you, but otherwise you are fine. The story isn't really connected, you can play the games in either order.
Honestly though the plot is only a very small part of these games, I doubt anyone really plays them for it.

Christ the lack of Predator Styles, and the slowness of the dialogue boxes, and this heaviness to the scythe compared to Resurrection, and seeing those Abandoned Arcs one by one is triggering me far too hard
