Onyx is Rock/Ground.
Ground is usually given to animal like pokemon that live underground or in arid areas. Think sandshrew or diglet. Rock types are either literally made of rocks or have a rock hard skin/armor.
Ground Pokemon are Pokemon that interact with earth, such as Sandshrew.
Rock Pokemon ae Pokemon made out of earth, like Onyx.
It's like how lightning strikes can cause fire. But you wouldn't call lightning and fire the same thing, would you?

normal type is about inherent and animalistic moves as well as uncoordinated strength
its reasonable that things like biting, scratching and just sheer bulk would be less effective against naturally hard materials such as rocks or metals and useless against supernatural beings (ghost)
on the other hand we have the refined martial arts of fighting which are highly adept at dealing with the unrefined attacks of the "normal" type

Ground type is a catch-all "earth" type for land-dwelling creatures (Sandshrew, Hippowdon) and beings fashioned from earth (Claydol, Pallosand). It's a very broad type and covers a lot of mons.
Rock is much more specific, referring explicitly to hardened, dense stone. Rock types are therefore very slow and have high defense. Think Onix, Gigalith, Carbink. The fossil mons are all half-Rock too.

Fire melts ice, water douses fire. Having water and ice separate makes perfect sense. If they were one thing would it be weak to fire or strong against it?
Ground/rock is the one that makes the least sense so far, although I don't know what fucked up new types they've added since Gold/Silver.

Rock is an elemental type, ground is typically an environmental type.
Most ground types are animal based pokemon that live in the ground or sand. Only recently has it been applied to pokemon that are made of clay (claydol, golurk, that sandcastle pokemon). Before that ground refereed to their environment and not what they're made of, much like most water types and flying types.
Rock on the other hand was exclusive to pokemon that were basically made or had that substance in their body. Fossil Pokemon were rock type because despite being revived they weren't quite free of their fossilized state.
The only rock type that isn't apparently made of rock is Tyranitar, but the thing eats dirt so I guess it's mineral based, making it rock.
Everything on earth can be a solid at the right temperature. Therefore we are all rocks.
