Super Mario RPG, Paper Mario, and Mario & Luigi Superstar Saga being good starting points
Do try sunshine as well as luigi's mansion. Both are bit of a cult hits that they have a strong following but not a large one

Well there's the obvious ones like Mario is missing, Hotel Mario, and Mario's Game Gallery
I'd avoid the newer Mario Partys and the Mario and Sonic Olympic Games games
Sticker Star and arguably the last two entries in the Mario and Luigi RPG series are also kinda shit
Other than that I can't really think of anything

Then you're fine. I personally didn't like Mario Strikers or the 3DS Tennis one.
As another user said before, Most (main series) mario games are good. Maybe the original mario 2 (known as "the lost levels") is not recommended as it's the same as mario 1, but really difficult. Also there's other SMB 2 (a completely different game with Mario Sprites), but it's really boring imo.

Speaking of which, the Mario Tennis for GBA is a surprising blend of tennis and an RPG, I'd check that out of you really find you like he sports games

They all have their positive's but they all bring such a different flavour to the main mechanics you really need to try for yourself.
If you want to really get a feel for the 2D Mario games, I recommend getting Super Mario Maker. You'll be able to play the styles of Mario 1, 2, 3, World and the New series and after that you can play the actual corresponding games depending on which style you liked.

Only the ones that players actually make. The game itself comes with about 50 of its own pre-made levels that Nintendo made.
