Dark Souls 1 has the best combat in that series, but you can't really make a general statement about which game is "best". Nioh and Platinum games are far more technical than Souls, but I still prefer Souls. It's not a matter of being better or worse, personal preference comes into play too much. You should ask a more narrow question like "which game has the most satisfying melee combat" or even "which game has the 'deepest' combat?"
Dark Souls 1 was clunky as fuck. The 4 direction dodge is horrible when you try to go back. Both 2 and 3 have better combat.

2 is horrible clunky shit and 3 is brainless spammy garbage. If you want to roll in any direction in Dark Souls just don't lock on. Lock-on is a tool, it doesn't need to be used all the time.

Fuck off, Souls games have most basic inputs of all time, the only saving grace is that there are a variety of weapons. It's balanced around a very limited stamina barstamina that does nothing but slow combat down.
It's not stylish, it's not deep, it's not even intuitive. The PVP is fun for sure but any game with good PVP is fun.
Korra isn't fun either, so I don't get your point.

I just like having more options and more interesting inputs and combos.
I love souls games but the combat is not really what you'd call deep. I'm an action game guy so going from Godhand or something to a souls game feels like I have no tools or ability to do anything cool.
But they aren't. Most systems have a tangible amount of depth unlike Souls which stops at running attack.

They're incredibly different and you can actually aim in DM. Are you fucking retarded or something?
Not him but it does. Each class has tons of skills and to excel(not that you have to) there is a degree of skill that must be had. Souls skill is just rolling at the right time and attacking 3 times before rolling again.

DD combat is only really fun when you're fighting huge monsters. When you're just fighting humans or goblins it kind of sucks.

Dragon's Dogma isn't deep either. Just because you can do more stuff doesn't make it deeper, in fact it's far more shallow than Souls, because enemies aren't a threat, never.

He didn't parry though. He used two separate moves that need to be timed to the enemies' attack. There is a parry mechanic in Nioh, and it's pretty simple, but that's not what the Nioh webms show. You can't do those moves by just holding down the parry button.

Yes, it does. Hard mode BBI is much harder than Souls because you can actually die in one hit, by weak monsters to boot. You can do some crazy shit in DD and there are even items on top of all the classes that expand combat even further. And you can throw monsters.

Ludwig is the best fight in any souls game ever and I don't think from will ever top it. The setup is similar to artorias. A legendary warrior hyped up throughout the game. A bastion of honor, a loyal warrior of light and enemy of evil. Then you meet him and everything is wrong. A twisted vessel of whst he once was, like artorias, a raging beast. But then something happens. Unlike artorias, Ludwig gains himself back. You get a vision of the warrior he used to be, the orchestral score swells, and for the briefest of moments, you look into the face of a man that was twisted by the evil he fought his whole life, and then the fight really begins.
No I take that back. I think Ludwig is the best boss fight of any video game I've ever played.

Yeah, and if the enemy design sucks, it drags the combat down. Having unique and interesting enemies is just as important as the number of moves you can do, which is the difference between a game and a punching-bag simulator. The normal enemies in DD, which are what you spend the majority of the time fighting, are not really that fun to fight.

Hard difficulty is a joke. Not balanced at all, the devs just increased enemy damage and called it a day. You have more option than Souls, sure, but none of that matters when the game is shallow as hell.
Fundamentally, the Souls combat is perfect for what it is, DD is not.
