In my opinion, there's room for both. Hard challenging games that engage you and require you to be as concentrated as possible and more casual freeform games that are more about you fucking around. If you can have a balance of the two, even better.

That's not true at all. Children play games all the time with no lose or win conditions because they are a pastime. And in some games the objective isn't to win or lose but to learn such as the point of Floor Games by HG Wells.

I don't think anyone is saying all games need to be challenging and hard. But games / series that once provided players a challenge that get made easier so it becomes more "accessible" is horse shit.
That's it, either make it a challenge or something where you can try out different things and explore.
But there's so many games being made that are completely linear and sterile, and completely not challenging . I really don't see the point of these. "Can you press buttons and get to the next cutscene?"

The problem I see is that the uninteresting gameplay ruins the pacing of said plot. It's filler for a frustrated film screenwriter.

Challenge is part of fun. Raising difficulty for the sake of game being difficult isn't good by any means but certain type of fun can only be achieved when increasing difficulty. Just like there are people who like bitter/sweet/sour things there are people who like certain types of games.
