Blood Omen 2 is completely optional and also happens to be the most boring game in the series. It's nearly 15 hours long and definitely feels it's length.
They are all pretty mediocre gameplaywise, just youtube the cutscenes if care about story.

The port of Soul Reaver 2 is buns.
Soul Reaver is pretty decent, even had gamepad support.

There's a version of Blood Omen made to run on modern systems, but it's still incredibly fragile and can completely fall apart on you halfway through. I'd honestly just recommend emulating the PS1 version. Longer load times, but way less frustration.
Soul Reaver has audio issues that vary from user to user. I never had much issues myself, but some people I know could never get it running without the audio bugging out in some serious ways. Dreamcast version is the best and most reliable way to play this one.
All the other games run fine after you make a few edits to get them running in a proper resolution.
All of them, except for possibly Blood Omen 2. It didn't add much to the story and it wasn't much fun to actually play. It did occasionally have some scantily-clad female vampires and warrior women, though.
The Legacy of Kain series is interesting because its games are always changing genres. The first Blood Omen was a top-down Zelda-like game with RPG elements. Soul Reaver was a 3D action-adventure with lots of puzzles. Soul Reaver 2 was similar. Then we get to Blood Omen 2, and it's a third-person behind-the-back action game. Finally we arrive at Defiance, which is more like Devil May Cry or God of War - third person action with light puzzles every now and then. They seemed to have had some trouble deciding exactly what genre they wanted the games to be, but at least the story was always interesting.
defiance runs nice out of box
sr1 your better off to emulate the dreamcast version because it has some nice enhancements
sr2 runs 'well enough' if it gives you problems just emulate it
bo2 is for the most part fine, but easily skippable all together.
The first Blood Omen is by far the most cohesive with the strongest sense of identity; the series never really topped it. The first Soul Reaver is still pretty solid, though.
The rest aren't very good, but Soul Reaver 1 ends on an unsatisfying cliffhanger that continues through SR2 and Defiance, so you'll want to check those out anyway most likely. I've never really cared for the direction of the story after SR1, but you may like it.

Soul Reaver is awesome. Whether or not it is moreso than Blood Omen is a matter of personal taste. Get it.
Soul Reaver 2 is really disappointing, especially if you play it fresh out of Soul Reaver. It's a pile of cutscenes connected by hallways. You can count the enemy variety on one hand. That said, it's very important to the story.
I can't speak to Blood Omen 2 or Defiance, but I've never heard anything good about Blood Omen 2. I started playing it and I'm trying to find the will to continue. If you have to play BO2, avoid the PS2 version as it's the most glitch-ridden version.
