Not really, 2 is more essential since what happens in 2 affects greatly the world in 3 and it's setting, but you can ignore them.

They are all good, Witcher 1 was least fun for me because of the shit combat otherwise it's pretty good.

Witcher 3 however is perfection it standout not just in witcher franchise but in whole gaming.
