Not OP, but in the same boat - what exactly is new on 2.8 that would make it worth playing? I always kinda figured it was remastered past games, but maybe I'm just assuming wrong?

2.8 is a mix of old and new. It's a remake of the 3DS game Dream Drop Distance, it has a movie of the Unchained X story, and it has a segment where you play Aqua, one of the main characters of Birth By Sleep, with the new KH3 engine that takes place after Birth By Sleep and explains what she's been up to between the end of that game and now.
Ultimately though, you should play Birth By Sleep because it's arguably one of the most important games to the story, and if you're playing the HD Remixes, at least watch the movies attached there for Days and Re:Coded.
Chain of Memories you can play if you just emulate the GBA version since it's shorter than the HD remake and plays better.
2.8 has a new movie that explains the important parts of the phone game.
it features the 3ds exclusive game dream drop distance in 60fps and will probably feature some other different things since it was 3ds exclusive
it also has the prologue to kh3 which is an entirely new game that is going to be as short as a full world in the main games.
1.5 + 2.5 rerelease on ps4 in march will have all the games in 1080p 60fps.

You can just skip CoM, even the movie. That game is fucking terrible.
Buy 2.8 and the 1.5+2.5 collection when they release on PS4 next year. Even though you've played KH1 and 2 before, the versions on the remasters are the Final Mix versions which add new abilities, enemies, bosses, cutscenes, etc. so you won't be playing the same games again. Between those three collections you'll also be able to play every game in the series except for Days (which doesn't matter because Days has awful gameplay), the original GBA version of Chain of Memories, and re:Coded (which is worth picking up used if you're still hungry for KH after you play everything else). Here's a breakdown:
1.5 - KH1 Final Mix, re:Chain of Memories (3D remake of a GBA game) and a movie version of Days
2.5 - KH2 Final Mix, Birth By Sleep Final Mix, and a movie version of Coded
2.8 - Kingdom Hearts Dream Drop Distance HD, 0.2 (short BRAND NEW game that fills in a couple of gaps in the story and acts effectively as a demo for KH3), Chi Back Cover (another movie that covers the backstory of the Keyblade War, the reason why the world was split hundreds of years before KH1)

They're very much major installments of the series even though Square's ridiculous numbering system makes them come across as spinoff titles.

The first game was centered on a MacGuffin; the titular "Kingdom Hearts". At this point there can be no possible satisfying explanation as to what it is. Each game in the series, following the first, has added more MacGuffins and abstract shit, until the series has become an intricate web of unexplained bizzare shit. It's impressive how much lore there is, but you realize it's never going to make sense, there's no possible way they can explain any of it in a satisfying way, and the next game in the series is always just going to add another layer of abstraction.
