Bottom game looks decent now for a game of its type, but it will age poorly. In 3 years it will look dated while top will still look like a current anime. This might be because anime artstyle does not change drastically with the improvement of computers, but because of that the top is as timeless as any modern anime.

The ground texture just stands out as more shitty in the below image.
There's probably also not nearly as much interactivity in the below image, whereas the top image deals with dynamic fire, day/night cycle, and climbable/fellable trees (I don't know much about the below game).
BotW also has very dynamically changing scenery, as you could be gliding or surfing or whatevering your way past the landscape very quickly (albeit with very obvious popin) and the game has to take this into account. I have no idea how the below game might do this though.
It's the Wii U capture footage. The limited HDMi is losing information and doesn't look right on various setups.
Footage captured directly or not using the limited HDMi looks much crisper because it still has all the color values.
At least that's the reason a lot of the pictures tend to look washed out, not sure about the OP image.

"open world" has been vastly redefined since LoZ on the NES, you're kidding yourself if you think zelda can be considered "open world" in a post GTA III era.
Just being honest the game is probably pushing more polygons and pulling better draw distances. GTA V on the newer consoles still outperforms Zelda from a technical perspective
but that doesn't make it look better than BotW in terms of aforementioned aesthetics, which admittedly is subjective.
