start with the original, like every series of games.
Start with Fallout 3. Not because it's the best game, but because it's decent enough to make you want to continue with the series and casual enough to hold your hand through everything. If you like it, play New Vegas. Skip Fallout 4 altogether. If after New Vegas, you find you enjoyed it a lot more than 3 and want to experience more of the Fallout universe, play 1 and then 2.

New Vegas is the best by far. To resort to an old cliche, Fallout 4 is a good game but a terrible Fallout game. Actually, it's a fucking abomination of a fallout game. But it was still fun for a little while. You're not missing much with 3, even though I liked it at the time it came out. If you play new vegas first you'll definitely never be able stick with 3 barring some heavy ass modding.

1 and 2 are best considering when they came out. 3 has lots of issues but a nice atmosphere and overally is much better than people on Sup Forums consider it to be.
NV is definitely the best out of modern ones and most enjoyable, but you'll probably have problem with enjoying other ones if you'll play it first.
4 is shit, don't even bother with it.

If you plan on playing NV do it AFTER you play FO3 otherwise you'll never enjoy 3.

Well I liked it, shoot me. And I'm not trying to defend the obvious issues it surely had, just saying that the game was very enjoyable for me regardless of them. Also "muh grimdark atmosphere"? Seriously? Who wrote that bait, if anything it was Fallout 1 that was grimdark, 3 was Bethesda's wacky 50s land with some actually nice elements and ideas here and there.

By ideas I didn't mean the lore, but rather gameplay and design elements, such as for example the radio. Made the game much more immersive, fun and memorable for me. Like I said, sure Fallout 3 was has more holes in it than a Gatling victim, but I still had way too much fun with it to consider it shit.

I like Fallout 4. The combat is fun and the companions and fun and likable and the settlement building is comfy. To me it pretty much embodies the phrase "it's a good game but a bad [series] game."
