I understand why people are upset about the gameplay changes, but what I never get is why episodic is a bad thing. Can someone explain how a game being episodic makes it bad? There's nothing about the format that adversely affects Resident Evil Revelations 2 or Life is Strange. Or Hitman.

You just posted it, though it's not so much "new" as it is he's been lead game designer for a little while now and only recently spoke at a SE event where he was asked questions. American sites got word of this and misinterpreted it to mean FFVII has a new/second director in charge, which set off a chain reaction of shitposting on Sup Forums for obvious reasons.

By trying to make it more "realistic". They start by changing up the art style, then the combat system, and so on. Which makes no sense, considering one of the best things about this game is how weird it was.
I'm okay with this gameplay, but maybe they should put in effort into making an 'original combat' mode? Come on Square, you're already making a shit ton of money by selling it in 3 parts.

I'm predicting this, but it depends ENTIRELY on whether or not Bob Bucholtz, the english voice director from the Compilation/KH/Dissidia, comes back. He's more or less been in charge of all FFVII-related dub work, in spite of how mediocre he is. Steve Burton is actually a pretty great Cloud when he's allowed to emote, and Mandy Moore/Andrea Bowen were both decent Aeris voice actors. Rachel Leigh cook pretty much owns Tifa as a character, and Beau Billingsea is a PERFECT Barrett. What they need is a good voice director, and Bob Bucholtz is in desperate need of replacement, preferably by Keythe Farley (FFXV english voice director.)

I hate it how this trailer and the trailers for FFXV showed the combat be filled to the brim with particles and cool effects only for FFXV to be downgraded and have unimpressive particles all around. Some trailers even showed Noctis leaving a lot of crystal particles each time he dodged or warped, but in the final version only a few sparks here and there are shown.

That doesn't predicate it being bad so much as just predicates it being episodic. You can be bummed about the fact that what was once one big, but obviously budgeted and experimental game is now three high budget games, but that does not predicate them being bad games on that alone. On that matter, nor does the games not being purely ATB any longer.
What ACTUALLY matters is whether or not the remake titles do whatever they do well. A shift in genre is not the end of the world in all cases. For example.; I was once pretty fucking salty about the Syndicate reboot being an FPS, but it actually turned out to be a surprisingly good FPS. What IS a problem is if a remake/reboot tries to do what it's source material did, but does it poorly (DmC:DMC comes to mind.) FFVIIR has outright blatantly stated that they aren't going to try to do the same thing with the gameplay, and judging from Midgar, the scenery will be a faithful, improved interpretation, but the story is still a concern.
Nomura and his team have already demonstrated that they are capable of making good ARPG mechanics when they put their mind to it (KH2FM's Critical mode was a blast), my only complaint being the inability to switch party members when it may or may not be practical to do so. FFVIIR seems to have allieviated that concern, so I'm not that worried about the gameplay. All I need to see now is how they are going to implement the Materia system, because that can be either really fascinating if well done in real time, or really pretentious if it's treated as an afterthought.
Besides, given how low on story content FFXV was, if they say they need to make it episodic to get an acceptable experience, I'm just going to take their word for it, because I can't handle another MGSV.
