I really liked Origins, but if you want a more retro/old school feeling then I'd go for Ys1&2.
Oath in Felghana was good but it depends if you want to follow Adol's story or not. I liked playing the different characters/storylines in Origins.

i'm not a weeb but i like FF games so i'm probably not going to give the typical /v review. the updated graphics are nice, but if you look at a comparison picture of Tidus from the original you'll laugh -- he looks more childish now. not a big deal though.
the game is good. they re-did all the music although i mostly played through using the original music. the story is kind of silly. the sphere grid is cool but i pretty much followed the default paths. overall it's a fun game, not too hard but there are some challenging bosses. part of me wants to sperg out and get 100% completion, the other part of me is an adult with a job and gf and other video games to play.
it's worth playing if you like FF games. i don't know how much it is on sale but i'd pay ~$20-25 for it since it comes with X-2 and some other related sequel, if you're into those. i bought it on PS4 so i don't know if the PC port is fucked up or what.
The only thing I wanted to buy was DaS3 DLC and it never went on sale.
Finish Talos, then get Witness. It's a different kind of good.

I think the PC port is your best bet, if only because you can freely change the music between original and remastered, and the some issues were fixed.
I really like the remastered soundtrack for the most part.
