I've only played the original, GBA and PSP. I'm pretty sure GBA and PSP are almost identical except for an extra dungeon in PSP. No reason to play the original unless you like the older graphis, so PSP is the best.

Any of the games where the characters' stats and abilities can be manipulated on the fly. So, 3, 5, 7, and sort of 8 but not really. The job systems allow for interesting combinations, but I think the materia system has been the best so far out of everything. Coming up with broken combinations is incredibly fun to me.

Bravely Default gets a special mention since it's basically just another FF game with that system.
