I have no idea where you gather that eggs are the healthiest food. They're good for you, but they are high in fat and cholesterol, don't provide very high quantities of vitamins like vegetables do, and to top it off their protein content, despite being the healthiest kind of protein, isn't that high.

First, it's only 15% fat.
And second, there are different kinds of fat. The fat that Avocados have is the healthy kind, not the same you find in your double bacon cheeseburgers.
