I played Ultima VII recently for the first time and thought it held up pretty well. The story is good, it's really fun to just walk around the world and talk to people (everyone you talk to is their own character and you can have actual conversations with them) and the writing is clever and made me laugh pretty hard sometimes (like the Unicorn in Destard or the nudist colony in Yew). The only part that I didn't like was the combat, because you don't really have much control over it. It is definitely worth playing if you are into RPGs at all, and it might get you interested to play the older ones, too.

The first 3 are only really worth playing for their historic significance.

don't fall for the meme, the VIII and IX are perfectly good games by todays standards. It's just that they're rushed and assfucked by the publishers. Fans back then were even more retarded than today, believe it or not.
My recommendation is; VI VII, if it's they seem too old for you, than go with either IX or VIII, then go back to VI and VII
