While it's commendable that you're trying to roleplay and/or engross yourself in the game so much, what do you want the game to do about it?

Blood and wine is canonically after the main plot. After finishing the game the main world is thrown before the end but as soon as you start blood and wine it's as if the main game is done if you've done it. Empress ciri even visits you at your winery.

All the other side quests can be looked at as Geralt still needing to earn money while looking for ciri. Even if the game showers you with gold from selling stuff I always look at it as Geralt is always dead broke.

Heart of stone can be seen as needing to urgently remove o'dimms mark thats why you drop everything to do it.

I wouldn't say that combat in W1 lowered the game's value in any way, it just didn't raise it. It wasn't good, but it also wasn't particularly unpleasant, while other elements were great and the overall product was very enjoyable. So in general I would say it's a great game, while with good combat it would be a perfect one.

That's one of the central themes of the saga. If it "removes" emotions at all it, only dampens them. People despise witchers though, so that's one of the prejudices they made up. You need a monster to fight a monster after all.

Also years of training and deprivation along with their whole existence having the clearly defined purpose of killing would make anybody appear cold. They know from the get go that they cannot have a family or build their own life. A certain degree of emotional detachment is only natural.

Also Geralt has unique mutations that only he ever survived. This makes him very different from all other witchers though the emotions thing is never specifically mentioned in that context.

trial of the grasses causes a lot of pain and stuff so witchers that survive it are a bit fucked up mentally so I think they just seem a bit unexpressive but I know witchers have been known to come up with random bullshit if it serves their purpose for example "the witchers code" is something they apparently live by but in the books and even game I think geralt explains how its just a fucking meme to get out of peasant bullshit by saying "ahh cant involve myself witcher code and all" so I wouldnt be surprised if this emotion stuff is also one of such things

I can't recall any, but writing that in shouldn't have been any more strenuous than writing in Geralt's special mutations in the first place.
They're mutating people with magic, mushrooms and who knows what else, you'd imagine a person's genetics could play into how their mutation progresses. Many don't survive after all.

No, from reading the books and playing all the games.
It's mentioned Geralt had his extra mutations that make him even stronger, faster etc than the average witcher (also his mom was a powerful sorceress but I don't know if it affects it).
However apart from the white hair, how does this ever come to play? In the novels he's not actually ever shown to be superior to any of his witcher brothers and he doesn't seem to have abilities that they lack in the games either. It's just a trivial piece of lore that Sapkowski inserted into the books for no discernible reason that never gets brought up again and only really detracts from his character.

I think at least in part a lot of Geralt's prestige is comes from the fact that he is quite old as witchers go so he has experience and with experience obviously comes a degree of competence that younger witchers might not have obtained yet.
