Underhell lets you shoot off appendages and the prolouge released in 2011. In fact if you break someones head and take off their helmet you get additional armor

If you want gore you can play Fallout, Manhunt, cod games made by treyarch, doom and wolfenstein.

The Ninja Gaiden games are pretty good if you want hack and slash, Ninja Gaiden II on 360 in particular.

Postal 2 with its mods/expansions are pretty over-the-top and violent.

That one Wolverine game on 360/PS3 was pretty gory and violent as well. Prototype also lets you cut people up, smash them, etc.

It's been awhile since I've played a game with satisfying gore/combat though, sometimes I just want to go ham and see blood/guts/body parts flying everywhere. Heck, it doesn't even need to be realistic, give me something like fruits with cartoony faces and mickey mouse arms, as long as the visual feedback is satisfying.

Max Payne 3 really could have used a bit of dismemberment, the actual gunplay was pretty great.

Killing Floor 2

Speaking of gunplay, the Sniper Elite games are great for satisfying bullet gore with its x-ray cam.

Just set the x-ray cam to activate all the time and have fun trying to pull off the different shots. I haven't played through all of Sniper Elite 3 yet but Sniper Elite 2 had some fun levels, they are pretty mediocre overall in terms of regular third person gameplay but you mainly play for the gore and sniping mechanics since its actually pretty satisfying.

Black Ops is surprisingly gory at times

I was gonna post this. I really liked the gore effects in Killing Floor 2. I really do miss gibs and excessive blood splatter in games. Watching parts of the map in Killing Floor 2 get painted red as the match goes on is pretty satisfying.
