People sudddenly realised that games are not limited to tetris, Mario and Doom. For many, this was first "story" game because it has style appealing to western audiencies, it lacks most of elements which are thought to drive "normal people" away from video games (altough it's mostly just them thinking "no, I'm too adult for games), and it's actually a good game. Tobyfox went for story over gameplay, and made sure there are alot of twists and stuff to keep people with lesser attention span entertained. Plus, it's supposed pacifism made it perfect symbol for some better-not-to-be-named-here populations.
Basically? Right place at right time, nothing less, nothing more.

that's a good view on the game
it's compared so many times to other earthbound-likes such as LISA and OFF but while those had attention towards making combat engaging, in undertale only the two bosses of genocide are actually made to be challenging, every other encounter is yes made to be engaging, but not in an overly frustrating way and is often used to build the character of the enemy/boss through dialogue and attacks, because combat is really just made to complement the story not the other way around.
there's also the matter of choice and consequence, a thing that can actually make UT and LISA comparable, but i found UT came on top simply because it recognizes it's a game and as such it can be gamed. I never lost anyone in LISA simply because i save scummed everytime a battle with a mutant didn't go right, you're supposed to see the harshness of the world through the permanent loss of your party members, and it works at first, but ultimately i only saw an excuse to save scum the shit out of the system. Same with choices. You can do the same with UT but there's the key difference that the game KNOWS, and it tells you, and as little as that may be, it makes the difference.
