In FFVI, there's actually some enemies are worth stealing. I remember the first merchant enemy you fight... he was a boss battle but you can make it easy as fuck by stealing him weapon and armor. Boss would be punching for low damage instead of doing high damage with his trusty sword that you stole.

Yes. Your level at tearing off each category of gear effects your chances of stealing stuff (as in it doesn't get ruined. It's super important that you can steal as much as you can because you can use extra gear to make your own stuff much stronger.

IIRC in ff7 NPCs could steal your ultimate weapons

You could also steal some battle suits in disc 1(?) and I think those are the best armour you get before the bonus dungeon.
If you don't include bloody armour abuse.
