Parry in DS2 is easy. You just need to use the correct equipment. Something a lot of people don't realize, about a lot of aspects of DS2.

A target shield will make it easier, for example, but it has a huge build-up time.

you are a complete fucking moron if you think that you stand even a remote chance with a low-level character in overlevel souls 2, especially with low upgrades from rushing to the arena
it's not ds1 where leveling past 120 gave almost no benefit, in ds2 there's massive benefits all the way to sl800

This. People like to cite Soul Memory as the reason why PvP was dead, but unless you literally just sat in an early game area to twink it wasn't ever a problem. The real problem is how scarce orbs are. Fromsoft saw the problem because in the DLCs they added obscure ways to farm them, but most players don't bother to learn about it so PvP stayed dead.

However this is just one of From's earlier steps to stop invasions. You can see it in BB (can't easily invade solo players) and DS3 (always invade into ganksquads).

DS3 is the most careful with invasion formula, i still invade solo hosts a lot on ng invasion ranges. Limited invasion orbs is probably the worst way to stop invasions From ever did as it killed any hope of getting invaded during pve runs. Meanwhile during dried finger runs in DS3 and sinister bell runs in BB there's one invader in my world at all times.

When I played 99% of my invades were into a ganksquad, or would quickly turn into ganksquads unless I was intentionally farming with like-minded PvPers in NG+. It was a pretty big problem that even reddit normalfags like Peeve were crying about it.

besides, most of the time dealing with multiple people isn't hard. i have two twinks with 99+ embers from invading, i can't imagine how easy it would be otherwise.

You're right, it was only ever a challenge in DS2 since you couldn't heal and had to play around the environment / enemies.
