Also no, you don't need to grind, although levels help immensely with the main game because of how defense scales. Mainly focus on upgrading/gemming your weapon so you don't get stuck in prolonged fights with anything other than bosses. Get good at parrying and use the rune that gives you health back from visceral attacks.
Grinding doesn't get you things you need honestly. To get stronger you mostly need to level up weapons, get blood gems, etc. All grinding will get you is blood vials and levels, which don't scale super hard without the weapons maxed and gemmed for the build.
Levels will simplify the game if you grind, but you'll find that grinding for levels in NG at certain points/places is super inefficient and will become overly time consuming.
It's far better to "Git Gud", than to grind your way to unbeatable soul levels.
scrub here, grinding often got me past fights I was struggling with since I' just ump all the echoes into health. being able to survive by a sliver attacks that killed you before makes a world of difference

No, grinding won't help you. If you want to truly power through the game you must learn how to cheese the ever living fuck out of everything.
Also if you're terminally bad you could always just summon phantoms.
I found that at some point, around when I fought Blood-Starved Beast, that the game started to get a lot easier. I think it was a combination of me getting better, and me finally getting enough Vit to be a little bulkier.
Just keep at it, and remember, take it slow, lure out enemies one at a time, pebbles are the best item in the game.

Friendly advice: unless you know exactly what you are doing, putting points into anything other than vit and str/dex(depending on what your weapon uses) is wrong.
Easiest optimal build is just pump heath and one damage stat equally until they hit 40

Its actually pretty hilarious how casual the game is after revisiting it. You can take take absurd amounts of hits by anything and not die while having unlimited healing unless you suck.
Level up your weapon.
What is the best build if all I want is a character who I can fuck around with every weapon.
Learn how i-frames work and then it gets easy

I actually just beat the game a few minutes ago for the first time. German wasn't near as hard as people make him out to be but I was level 82 so I might have overleveled past what they expect you to be.

Anyone can beat the game naked with the starter weapon if they tried, just git gud.
That's the only boss I haven't fought yet I'm particularly concerned about. Consensus seems to be that it's the hardest in the whole game.

Very much so. First phase is mostly manageable if you're up to par on your parry-fu. Second phase ranges from frustrating to complete and utter bullshit because of his jumping ranged attacks that virtually can't be dodged.

Is there even a point to increasing endurance? It seems I can never get in more than 2-3 hits on a boss before having to back off anyway.

There's nothing "efficient" about grinding out levels which aren't even necessary to beat the game.
The game can be beaten at BL4, as long as you upgrade your weapon and learn the enemy patterns you can get through the whole game.
certain weapons can make great use of it for combos, but mainly the pizza cutter for infinite hitstun/dps on bosses
Is this something you can reasonably attain in this game? I like to Min/Max and always want to just get everything to 40 in Souls games but it's such a fucking chore after a certain point.

I'd like to take a second to note the irony though, that the two easiest souls games in the series have the two most absolute ball-busting SL1/BL4 runs.
Seriously. DeS SL1 was a fucking nightmare compares to DaS, and I've still never been able to finish BB BL4, nevermind an allbosses run. Hell, I don't know how anyone does that fucking shit.

The damage per hit and lava pooling, and explosions everywhere was what did it.
Nah it's a dumpster of a stat unless you have a very specific build in mind. Waste of points. Stamina is increased thorough the anti clockwise rune (which is usually a must have)
