Why are they so popular?
From what I've seen the combat is the same old run of the mill turn based JRPG shit that's been done over and over since the early 80s.
Is it because of the harem elements? Is it because the audience has no friends in real life? Seriously, what's the big attraction?

the only reason I had P5 in my PS4 is because my sister wanted to play it and she did cleared it before I even stepped into the overworld at all, I took glances on our TV from time to time and I think Altus did a good job on making the gameplay feels not-sluggish despite being a turn-based RPG

Automata will probably be one of my top 10 favorite games of all time but I do enjoy a good RPG.

Honestly, that logic probably has probably made you pass some really great games, but hey

All SMT games differ from other RPGs in that they have a high focus on status ailments, luck/mitigating luck, buffs, debuffs, high risk/high reward scenarios and fusing monsters in complicated sequences to create ones that have moves they otherwise couldn't learn; as well as having a large variety of demons, gods and creatures from folklore that many people are familiar with (since it draws on all faiths, mythologies and cultures).

In my opinion, it's so much that it brings anything new to the table as much as it does things better than any other JRPG. There is actual depth in the decision making both in combat and out of combat. There are complicated systems like the fusion system that are difficult to understand but very rewarding when you learn them. Equally, the game is very punishing if you do not think ahead of everything. A good example is light and dark moves which in most games cause instant game over. There are however items to mitigate it, demons that are immune, armors to prevent it, etc. If you go "pff light and dark have such a low hit chance it's not worth investing in somethign to defend yourself" then you'll kick yourself down the line.

The game demands you learn its systems and utilize them to their fullest or it will be very hard.
