Combat-wise you should be able to go 100% with a controller, no tablet.
There are a couple of puzzles that require the tablet, thankfully CEMU can switch between the two, so with some juggling you should be able to complete the game without a physical tablet.

No, Unite Morphs can be done with the right stick or by holding down the button when you get the skill.
There are some segments where you need to look at the gamepad but that's where the switch view option comes into play.
