Why the fuck are zelda suddenly absurdly high? These aren't even BoTW either.
Nintendo locked some exclusive content to the old ones for "fans" so Original smash link gets you Epona, toon link gets you Windwaker clothes, etc. and theres no other way to get them, so autists are quickly buying up every amiibo they can for the exclusive content.
They still give you things in botw, such as epona for the normal link smash bros amiibo

I ordered 8 bit link from gamestops website and somehow they fucked up and sent me an empty box. I tried calling them but i couldn't get through to customer service. I managed to find one at toys r us but now gamestop is resending my order. So now i'll have 2 8-bit links. Should i try to sell the extra one? I dont see where theyre going for $70 anywhere.
I haven't seen a new Toon Link, Zelda and Sheik (All smash) in stores for like 2 years now, were those re-released? Because all I need is a Zelda (Smash) and I'm gold, don't really care for the other ones.

But they aren't out of production. They are just out of stock. Nintendo said they had no plans to cease production on any non-limited edition amiibo.
I get people want the Amiibo now, while the game is still new to them, but they will most likely come back in stock in the next few weeks.
Which is why you take advantage of it now. Selkl off your zelda amiibos for like $300, and then buy them back when the hype dies down for like $20 flat.
But Ebay scalping is alright tho.

Most of the amiibos people are looking for is sold out and won't be seeing a reproduction until later this year, at best.

Thats exactly what you're doing buying from that etsy seller. He re-purposes amiibo data and reprints the NFC in the card. he's literally printing illegal amiibos and raking the profits.

It's not so much exclusive content as much as it is reskins so you can obtain everything in game but not with that skin.
