Ever since then, Bioware has bowed to the pressure and have gender-gated and even race-gated the romance options, meaning that only a few options will be available to the player, instead of all of them. The gaming community has accepted this. This is bad.
Yes, it is unrealistic that all romance options just happen to not care what your gender is. But there are many things that are unrealistic in gaming that we accept otherwise the games themselves would not be fun. We accept, for example, that missions will just sit there in stasis until we, the player, gets around to starting them even though it is highly unlikely that would be the case. We accept this because the alternative (having all missions be on timers) would dramatically reduce the enjoyment of a number of players. We suspend disbelief and keep playing.
Similarly, opening up all love interests to all players has many advantages too. The immediate obvious benefit is that players can finally have the love interest that they want to romance while playing the gender you want to play. No more romancing someone you're not that into because the one you really want is locked to you. Or playing as a gender or race you don't want to because that's the only way to get the romance that you want. And on a meta level, no more having to read a bajillion threads and comments from players speculating on who can be romanced by what or being upset with who their romance options are. Wouldn't this be better? Is having to suspend your disbelief about one more in-game mechanic that much of a sacrifice to make?

I don't think it matters if every character is potentially bisexual. I think what matters more, is that it's so transparent, it's like seeing the inner clockwork of the game. You shouldn't be able to see behind the curtain.
The player shouldn't have the ability to bed every character with ease. Getting a character to be romantic with the player should be a long investment, which essentially forces the player to omit other options, in order to invest their time and energy into the one option.
Ideally, your average player should never have the wherewithal to pull off multi romances in a single game. That feat should be only attainable by the most dedicated players.
