Acording to Miyazaki, the elite knight set is the best all around armor in terms of theme. It fully realizes the combo of being somewhere between a knight and an adventurer.

In DS3, Silver Knight chest piece, Painting Guardian gloves and leggins/skirt, and either the brass helm, the big hat, or whatever looks good in your opinion

Maybe it's just me being autistic and personifying helmets as faces but I feel like the Elite Knight Helmet has a ton of character. A lot of the DS1 main character sets do. Lautrec, Siegmeyer, Lady Darkling, even Solaire's simple bucket helm and feather.
