A SL1 run is super easy, you can kill every boss in a couple hits with pyromancy: dusk's helm, bellowing flame ring, red tearstone ring, great combustion.
If you don't want to do that, lighting/fire weapons can still slaughter bosses quickly.
Versus some certain bosses you can use the leo ring + heavy crossbow and you'll have a very easy time since you'll have plenty of time to react.
You might want to add some more restrictions to your run.
first thing you wanna grab is the red tearstone ring then the grass crest shield (and try to get the bk halberd while you're at it)
after that, play the game like normal, just don't level up and don't get hit

That being said; this user isn't entirely off the mark. Pyromancy can become incredibly overpowered and is extremely useful in these kinds of runs. Lightning weapons can also help to cheese the game and are relatively easy to obtain.
If anything; I would recommend a low level, forced glass cannon run (cursed, dusk ring, red tearstone) at around level fifteen or thirty depending on how much leeway you're willing to allow.

You do ok until you get to 4nigz and then get stuck there for several hours.
At least that's how it went for me, was a lot of fun, though.

dodging is better than blocking in most cases as you lack the stamina to block bigger attacks

RTSR is really not needed for regular NG, it's easy as shit. With upgraded clothes you can take like 2-3 hits from every boss and still live as SL1. It's better to just user Lingering to cast Power Within, then switch it out for a combat ring and go with full HP. Or store Power Within in the 3rd Attunement slot from Darkmoon ring, cast it and swith it out. In NG bosses have practically no HP, you can just overpower them with Crown, Bellowing ring, Power Within and Great Combustion. Melee only is harder, but the only bosses that are real bitches are O&S and Kalameet due to bad RNG, shitty hitboxes, glitched AI and pathfinding and other stuff. But you won't even notice all this stuff in NG, so it's fine.

How do you kill the four kings on NG+7 if you're restricting yourself to a +15 and no pyromancy?

You still need to kill bosses.
Light Crossbow has a faster reload animation and Heavy Crossbow is also heavy, I don't even know if you can fastroll with if if you use a Reinforced Club/BS Hammer in the other slot and Grass Crest.
FaP is useful for everything that isn't 4 Kings. It gives you enough stamina for a 2nd roll after a roll and a Reinforced Club R2. Because stamina gets frozen and doesn't regenerate for a second or so when you use it.
I did 4 Kings with the BS Hammer (which deals less damage than chaos), it's really not as hard as everyone thinks if you're not shit at the game. Hard bosses are the bosses full of RNG and glitches (O&S, Kalameet and also 3 skellies aka Nito).
+15 Reinforced Club is only used for Artorias, Manus and Kalameet because they shit all over split damage from elemental weapons.
Running keeps them out of range until you have an opportunity to attack.
You can legit kill the asylum demon at the start without firebombs with this tactic if you're patient enough, but who cares about that?
