Use Alucard. In any case DoS boss fights are their best when you can't power farm and just have a limited moveset and stats.

I beat this just recently and enjoyed it but not as much as Bloodlines, IV, 3, or Rondo. Also is there a difference between the Arranged version apart from a different Simon sprite and remixed music? Because so far it's like the original version apart from those.

It destroyed the series along with 3D but it's still a good game, just like Resident Evil 4 is still good even though it ruined the franchise.
