What games make good use of status effects? Or a better question might be, which RPG games feature mobs that aren't trash? Which RPGs have normal fights that aren't total throwaways?
Off the top of my head, games like UnderRail and Divinity OS are good about this.

Play Etrian Odyssey, Hexer is the dedicated status ailment class and they're damn good at it.
I really like EO, but I've never used a Hexer. I like to use the dominatrix for binds but I don't use debuffs enough.
I'm trying to get into the Mystery Dungeon game, which is pretty nice, but it's been feeling too easy so far. Hexers are in it, though, so I hope it gets tough enough to make using one worth it.

EO2 Hexers are OP as fuck, check it out. Torpor can put all the enemies to sleep and has a fairly high activation rate, Poison absolutely wrecks the early game, and Evil Eye allows you to terrify enemies to let you control them against their will (like forcing them to waste a turn to hit themselves).

Darkest Dungeon has only a few legit status effects but they can make or break a battle for you.
