ALttP, LA, OoT, MM, Oracle, Wind Waker, Minish Cap, TP. Those are the ones I played at least. DS ones can be skipped, you're not missing much, also Four Swords, though it does wrap up the storyline put in place by Minish Cap.

It was easy to animate and therefore cheap, it isn't rocket science user.
And people don't really talk about it, but im pretty sure when people think about how the goddesses look outside of the GOLD STATUE form they automatically think of the Oracles, so it was probably more influential then people think, and the oracles were good designs so who can blame em.
STs main draw is that it actually had Zelda and Link as a team, and a great fucking OST, but that goes without saying.

I wish the train riding was more involved desu. I wish we had to shovel some coal or flip more switches and gears. The train riding was so bare bones it killed me. At least you could explore and choose where to go in phantom hourglass but ST was literally on rails

80% of the complaints are about it being too cryptic and/or hard. It was also hated on for "breaking formula" and that's really weird. Not being hard enough and sticking to a worn formula make up most the complaints about Zelda today. Thankfully we got Breath of the Wild now.

IIRC it was actually emulated pretty soon after release, rather easily at that, but im not sure if you actually needed a actual Wiimote at the time or not, i think you did.
Basically if remember shit right SS ran on Dolphin, but Dolphin needed you to set up a Wiimoteplus to your computer or some shit.

I'd say they're all worth a go even 2. Which ones you'll like is pretty difficult to guess though.

Twilight Princess for 3D adventure(maybe OoT if you're ok with N64 looks)

I don't think the Oracles games are nearly as interesting as the ultra-quirky LA. It also established the more character-driven stories that would become common later. I'm going to be very honest, I find the Oracles games boring (and Minish Cap), but LA was charming.
ALttP is possibly the most important game in the series. All others after it based themselves on its structure, more than on LoZ. Although LBW in some ways is a middle ground between the usual zelda formula and BotW's open-ness, it still feels very derivative. Also, out of curiosity, which game has more content and lasts longer? I get the feeling it's LttP, but it's not like I've actuall compared the two in that way.

Basically, when you beat one of them you get a password you can use in the other one for a altered gameplay experience.
You could also do the linking via Link Cable IIRC, but i happen to know you gonna emulate anyway, so password for you.
Mind you BOTH games are "full length" for GBC games even without Linking so it isn't some kind of CUT CONTENT crap going on, just getting a lot of game.
There was actually even going to be third game originally but the linking gimmick would gotten too complicated, that's why there are 3 Oracles but only 2 games.
LttP has more content and is in general a better game with more involved and challenging puzzles. LBW's open world structure could have been great but they ended up only going halfway with puzzles in general - it avoids backtracking between dungeons, but it makes the game a cake walk.

I think you should give the oracle games another playthrough. I'm not sure how you could find them boring. There are SO MANY little secrets and things to find in the world. The world feels really fleshed out. They're some of my favorite zelda games.

OoT, as of TP and certainly as of BotW, has influenced more than ALttP has within the series, though you're right about it essentially be a remixed version of LttP.
The original version of that template didn't have hundreds of meaningless variants on the standard "this game is good" image. Then reddit got hold of it and ruined it by taking it too far, as they always do.
It's one of the games with higher compatibility. I checked once, it launched and looked fine.

If you're looking for a GOOD 2-D Zelda, go play Awakening or the Oracle games (assuming you've played LttP of course). After those you can play Minish Cap if you still want more.
Don't get me wrong, LBW isn't a BAD game, it's just not reached any of the bars that any of the previous 2D Zelda's set.

Am I in the minority by preferring aLttP over aLBW? I just think the aesthetic is more pleasing and gives it a greater atmosphere, and while Between Worlds has a lot of cools mechanics the dungeons get a little too convoluted for my taste. It's not a huge difference by I'd play Link to the Past over Between Worlds anyday.
