Well the choreography is definitely a lot better than it was in the original series, that combined with the always excellent art direction and score people remember, higher stakes, and weightier emotional investment made for a great combination.

You need to understand the context, really. There's a lot of build up to the fight scene in that webm.
The show aired for four seasons on Cartoon Network, so it couldn't actually depict violence (all the enemies Jack killed were robots, and it was kind of silly/tiresome). Now it's been rebooted on Adult Swim, so there are no more limitations.
But instead of going "fuck yeah time for gore" (like DC comics animation is doing now) and using "brutal" violence as a marketing angle, the show tries to address the issue of killing actual people and how it's a notable shift in both tone and character.
Samurai Jack is also a show that's noted for it's use of minimalism and color, so when you see splashes of red for the first time, it has that additional contextual effect.
