There is exactly one boss that's "copy-paste," which is the stray demon, and he's an optional side-boss. Every other boss is new.
As someone who thinks all the Soul games are overhyped trash, DS2 had some good variety in PVP. I put more time into this one because various builds WORKED. I had 7+ characters all with different magic builds, weapon builds, etc.
It's just unfortunate that the PVE combat in these games are just R1 spam.

Demon's Souls is unique and always a good time and I buzz through it fairly quick now that I have all the weapons from the get go post NG
Dark Souls is a classic and always fun to make return trip to Lordran and see some familiar faces
Dark Souls III is a good game and have only played through it once but I have a much stronger desire to respec my character and replay it because it is still unfamiliar and it has that current gen polish to it and runs like a dream on my computer
but Dark Souls II, while I did enjoy it the first go around, I eventually got kind of tired of it and just wanted it to be over. Nothing really sticks out for me as something that I'm chomping at the bit to return to
Bloodborne was fantastic, I've played through it once and plan on getting the platinum which would be 2nd platinum trophy ever for me, the first being Demon's Souls

In terms of content, Dark Souls II feels like a much larger game than Dark souls 3 and to a lesser extent Dark souls I, but it's marred by the fact that A: the level design feels much much less grandiose and organic than dark souls I, B: The lighting/graphics make you feel like you're playing the game with your eyes perpetually strained (WHY THE FUCK IS IT SO BRIGHT AND GREEN ALL THE TIME) and C: The game as a whole feels more sluggish and floaty during combat, especially with rolling. However, in terms of sheer content the game feels the strongest of all of three dark souls games, all the categories of weapons were filled to the brim with interesting weapons, there was a wide diversity of spells (dead again, forbidden sun, etc) and the enemy design was probably the best out of all three of the games.
I'm still trying to figure out the bullshit behind that elevator in the windmill that goes UP to Bowser's LavaLand.

Almost everything feels the same with maybe 1-2 slightly unique weapons in a class (and most of the time it's not even and actual interesting moveset, it's that it also casts a buff/gimmick spell/is just a catalyst that can also light attack)
Bloodborne has the best weapon variety, less weapons overall, but almost every single one is it's own class.
Of the Dark Souls games, 3 has the best weapon variety by far (especially with the DLC which smokes the variety in the other 2 games almost by itself)

Demon's Souls and Dark Souls 1 were never intended to be hard for the sake of being hard, they were paying homage to classic games that actually challenged the player.
Dark Souls 2 played into the idiot fans of "OMG so hard, much difficulty, many deaths LOL". Dark Souls 2 also has the most unfair bullshit and artificial difficulty in the series.

Their AI is atrocious, they just walk up to get stunlocked, or if you can't stunlock them, roll right through their 1 attack that they do every time for a backstab. In fact, that's pretty much 90% of enemies in DS2 because it was designed around fighting groups of retards so nothing on it's own is actually interesting.

All the "Souls stuff" is there, but it's not cohesive.
It's an action-adventure game with Souls assets. It feels a lot like a fan mod or something, it's honestly quite endearing.
I don't dislike DS2, but "B-Team" undeniably fucked up. They didn't understand what hardcore fans enjoyed so much about the series.
Dark Souls 2 sucks compared to the other games in the series, but it is still better than 90% of all other games.

I'm not going to defend the level design/enemy placement of Dark Souls II, that's one of if not it's greatest flaw, but in terms of creative enemy design I still stand by Dark Souls II as having the most varied and interesting enemies in the series, about the only interesting designs in Dark Souls I are the Titanite Demons, the Gargoyles, the Moonlight butterfly, and maybe the abyss-enemies. Dark Souls III it's the same shit, a lot of generic knights of various sizes, a shitload of enemies in armor and not a whole lot else. And the worst part about Dark Souls 3 is that none of the enemies are particularly fun to fight against and usually rely upon some bullshit gimmick like the Jailors and the Serpent Men who can snipe you through walls for some reason.

I hate all kinds of stuff for the most petty, insignificant reasons, but DS2 manages to make me not care about the flaws as they (to me anyway) end up contributing to the overall package in an impossibly positive way

This was the Souls game that I was introduced to by friends who wouldn't stop chanting about the difficulty. It wasn't particularly hard at all and I quickly realized the game is all about trial and error.
However, the worst part of DS2 comes from the part where you're told to kill 4 bosses to advance. The road to the final boss/castle is blocked by waist high RUBBLE that you could just climb over. But no, go gather the souls of 4 fuckers instead. B-Team didn't really think things through did they?

Bloodborne was alright but I hate the level design. The shortcuts are fucking constant and super predictable and it totally kills the immersion and all of the surprise and joy of finding them.

I'm not saying DS3 has no enemy variety, the issue is that there are too many copy and pasted enemies within it, how many times do you remember fighting the cathedral knights? How many times did you fight the Thralls? How many times did you fight the Lothric Knights? At least with DS2 there were, for the most part, new enemies in each new area rather than having the same fucking enemies copy and pasted over half the goddamn game, not to mention the fact that apart from the ones you listed and even including the cage spiders, the lycanthropes, the corvian storytellers and the evangelists a lot of the enemies are just some undead chucklefuck with a weapon, the Jailors, the knights, the wax-sorcerers, basically everything in Irithyll, the skeletons in the crypts, plus all of the re-hashed enemies from DSI and 2.
