The original one from 2011 was from a demo that was running on the Wii U console at E3, where the viewers were able to control the camera in real-time

However, it is quite likely that Nintendo opted not to use that level of detail in the new Zelda game because, like with Wind Waker, they realized a more cartoony simplistic look would allow them to create the game faster.

If the game had full HD graphics similar to say, Pikmin 3 - which shows the console can pull it off - we likely would not be seeing Zelda released this year.

Nintendo has been struggling with HD development for some time now, and that is the reason the Switch is basically just a portable Wii U in terms of graphics. To upgrade again would cause further delays in game production.

That is why Splatoon and Mario Kart look the same as they did on Wii U.

That tech demo was rendered in a single room with two moving models. Obviously an open world game with an intensive physics system is going to look less detailed.

The one on the right is objectively the best of the 3, deal with it.

2016 looks better than 2014 at least. Anyway yeah I think the character models are a bit disappointing but environmentally the game looks good. I think the visuals had to be a concession to how big the game is.
