They don't want to change the core gameplay, they're in cahoots with the Korean professional scene so they're not going to do anything too drastic.
They're going to fix some historical bugs about the Valkyrie and another unit I don't remember and maybe add custom keybinds but that's it.

Changing the 12 unit selection would be such a massive change to the competitive gameplay that they don't dare risk it. The balance of the game which has been worked on by map makers for 19 years would be completely thrown off.

You need to take your hand off the mouse to hit fucking M. I saw no way to rebind it natively and my google attempts only brought up TL threads for dead programs (WC3 required a simple text file change). So until they fix that I won't be playing. M. What were they thinking.

SC2 autism has tainted the memory of this amazing game. There's a reason it's still one of the top played games in net cafes, boys... mostly because Koreans are born autistic, but also because it's a good game. SC2 is more refined, but so is Diablo 3, does that mean D3 is better than D2? Sometimes, lack of refinement is what makes a game endearing.

The reason this is being remastered is a pretty simple one and it's South Korea. SC2 despite uninformed belief to the latter did not take off in South Korea with the fans, despite most of the pro-scene switching over (more-so because they had no real choice, that was where the money was, that was where the tournaments were and Broodwar had taken a lot of damage from the SAviOr match-fixing scandal that scared off a lot of sponsors). Brood War continued to be a more popular game in PC Bangs than SC2 by a large margin (mostly due to UMS and the Fish server), efforts to convert fans to watching SC2 were for the most part a failure, even with brief spikes of interest when Broodwar stars like Flash and Jaedong switched. They have since gone back to Broodwar and recent Broodwar tournaments have had massive spikes in viewership on Afreeca (South Korean streaming service) and at times are eclipsing Starcraft 2 events even without much viewership in non-Korean countries. There's basically no hope of ever getting Korea to accept SC2. Starcraft Remastered is the answer to that, giving South Korea exactly what they've been asking for over a decade and putting in the necessary features and support to encourage large-scale Broodwar competition in South Korea again. In short, it's not made for us. It's made for them. If we buy it (and some will) then great, but that's not their concern. South Korea will buy it. Any changes made to the game that in any way affected the way it is played or its balance would not be tolerated. People who want modern changes such as UI improvements, unlimited groups, multi-building hotkeys, auto-rallying workers, then go and play Starcraft 2. Anyone complaining about the way this remaster is being done has fundamentally misunderstood what and who it's for. Blizzard wants South Korea back, they want Starcraft to be loved over there again and this is the only way they can make that happen.
Is that why Diablo II and Warcraft III are also getting remastered? Because the remastering effort covers all three games, not just Starcraft.

Blizz did everything they could for the SC2 esports scene besides actually make the game that interesting to watch. Starcraft with unlimited unit selection was inevitably going to lead to 2 deathballs clashing and deciding the game right there. SC2 was fucked from day 1. It's gotten better since then and LotV is actually watchable but SC2 in 2010 was just an unfinished, half baked product with design mistakes that haven't been fixed to this day

Well first I get that why they're doing this instead of a third game is because they really screwed up SCII's artstyle, and they want to gain back the South Korean audience (and also they screwed themselves with the story).
I definitely would have updated the gameplay to more modern standards though. Things like controlling more than 12 units are a must and there's no real excuse to not having it in the game now that the RTS genre has basically been perfected. I do get that some strategies would become overpowered (like the above-mentioned Mutalisk spam), but the game could easily be rebalanced too. It's not like the gameplay designers are the guys doing the graphics update, so it wouldn't necessarily delay the remaster. Really, gameplay that is balanced around clearly arbitrary restrictions is not good design. A couple more units per faction would be good too.
Then there's stuff like the UI. God that UI. Don't tell me you actually need all the unit command buttons on the bottom-right part of the screen, anyone decent uses the hotkeys and thus they could easily add a minimal UI option. It does look nice but a minimal UI could look nice too, and esthetics should not trump gameplay (we got enough of that IRL, hehe).

Friendly reminder: Bundled with free starcraft and reportedly other blizzard games is useless apple bloatware called bonjour something or other. If you've installed the game you can find in in program files x86 in the blizzard folder. It's claimed that this program helps with LAN games, but the official description of the program mentions no such thing. If you have no use for it feel free to end its process in the task manager and delete it, however it'll probably be reinstalled the moment the game updates.
