Bloodborne does somewhat of a sub genre switch I guess. I can't think of any full on ones from the top of my head but I know they exist.

Hatoful Boyfriend is an interesting example. It switches genre AFTER you beat the game, as the ending reveals that the game is actually a murder mystery and not a dating sim.
Evoland 2 was a lot better. Changes from 8bit to 16bit and 3d too.

Haven't played it but how does it change genre?
Goes from a slow-paced first person detective/hide-n-seek atmospheric game to a very poorly implemented FPS about half-way through. Supposedly from outside pressure for sales, which obviously backfired heavily. Still worth playing but don't expect a satisfying conclusion to the early promise.
