Knight. Don't listen if anyone else tells you anything other than knight.
His stats are decent, but that isn't important because you can level them up however the fuck you want to build them, but he starts with a higher health pool and has armor that is still good until you start getting a good way through the game right out the gate and a shield that will serve you well until well over halfway through the game too. His long sword is a decent weapon as well.
You want to go light? Take the armor off.
You want to go magic or faith based? You fucked up, they don't scale for shit in Dark Souls 3 and you will be getting your dick knocked off through the bulk of the game.
Melee is where it is at and the knight is the absolute best starting class for survivablity early on and has hands down the best starting gear.
Go knight easy as piss and good stats dont go assassin anyone can parry and the attunement and intelligents fucks you if you want to reset your stats
Sorcerer. Have fun never having to worry about mobs outside of bosses.

DS3 is only Souls game I just can't get into. I started it almost a year ago, but I can't get into a good flow with it. I'll fire it up after a month or more, make a bit of progress, and just get burned out and give up after dying a couple times. I saw a thread about it yesterday which caused me to fire it up again, I couldn't even remember where I was at. Currently fighting Aldrich, which is just a ball ache, it's not even really hard I just hate bosses who spam AoE attacks, especially ones that can instakill you. I'll die to him like 3 times and immediately want to stop playing, which never happened with any of the previous games. Dunno, maybe I'm just bored of the formula now.
Regular boring straight swords are by far the best weapons to use in the game.

I'm feeling the same with this last DLC. I want to push through it but I die a couple of times and just play something else. These angel enemies are fucking cancer.

The knight and I guess the two mage classes are the only classes worth anything in this game. With the knight you can go either direction, full strength or full dex, with no issue.
I feel basically the same way. After I beat the game I felt absolutely no desire to ever play it again, but did so anyway for the DLCs, and it was a chore to get far enough for those. After finishing those I put it down again and haven't touched it since. Some of it is Souls fatigue, yes, but I don't think that's the whole story. There's something fundamentally wrong with this game that I can't quite put my finger on.
The mercenary is probably one of the best classes since the sellsword twin blades are one of the best weapons in the game unless they nerfed them.
You go deprived, kill The Last Giant and the Pursuer, run through no mans wharf and kill the flexile sentry. Grab the pyromancy hand and you've pretty much won the game from that point.
Use fire. He's really weak to fire. 6 shot him on my pyromancer and avoiding his dumbass attacks.

Freeing up the forest gives easy access to the fire lizards which drop pyromancies though.

DS2 is the hardest dark souls game
Only by merit of it being a chore to play. But the bosses are the easiest, hands down.
And no, the few DLC bosses does not make the entire game harder than BB or DS3
It's contender for hardest PvE but that's about it.

I find it alot easier to dodge big dude in armour than the more varied bosses in DS1.
My major point is when I was doing my first few runs of DS1 I always had to use my souls up incase I died. In DS2 I literally never did this and oneshot most bosses
