The combat wasn't designed with a hard lock on system. I think the soft lock is as far as the system needs to go.

Dark Souls isn't just boss fights, it's also about fighting normal enemies. Lock on is important to keep all of the minor enemies in check.

Freedom Unite for iOS has full lock-on. It makes the combat very disorienting because the monsters move around so much.

Yeah thankfully you can disable it in that version. It wouldn't hurt to have it as a feature available in all the games but I can see why it's not ideal after trying it.
